Hey,
have a look at sitarsetc.com for some tunings. Many people use C# for tonic. I don't know western music at all since I started with the sitar. I bought a chromatic tuner so that I could learn western notes :-)
I wrote a little chart a while ago mapping sa->4C# etc, play a note look at the tuner kind of thing. Then, it is just a matter of getting used to it. You should get a teacher so that you don't waste time with basics (I forgot whether you said you had one). Tuning is a difficult thing to start. Try karaj-pancham (ravi shankar) tuning, unless you have a vilayat khan style sitar. If you find that too "twangy", go to the standard one. (see charts on the web for those).

If you would be a little bit proactive and buy a book, many of your questions would be answered. There's a lot of people here on this forum that can and will help, but you gotta do your part too.
